Joyce Chen Chinese kitchen knife. High-carbon stainless steel blade. Styled after a traditional Chinese kitchen knife and should be used only for cutting, dicing, slicing only. Its slightly curved blades allows a rocking motion to quickly dice and mince.
It is NOT designed for chopping through bones, this knife is NOT a cleaver and chopping bones will damage the blade.
